Raw tea can be made ripe, and new tea can be non-cold in nature. This is not difficult at all. What is difficult is the cognition of tea makers and whether the market accepts it. The market has hijacked the craftsmanship of most tea farmers and merchants: they don't fully process the tea. These raw teas that need aging, due to market pressure, can't wait to age and are rushed to market. The process is not complete, and the results can be imagined. Many tea friends who drink raw tea dare not drink tea anymore...
